Chewy Collagen Keto Haystack Fat Bombs

Growing up haystack cookies were always one of my favourites. Obviously all of the sugar & oats make haystacks super not keto but with some slight adjustments I was able to satisfy that craving + pack in some healthy fats & add some of that Organika Enhanced Collagen I love so much. These fat bombs can be made chewy or crunchy + that satisfy that sweet tooth with almost no carbs (seriously only 0.3g carbs each).



If you haven't already been able to tell I love adding Organika Enhanced Collagen to my fat bombs for multiple benefits. Collagen packs 8g of protein per 8.5g serving which is perfect for helping you to keep full & satisfied. Organika now makes 3 wonderful kinds of Enhanced Collagen - Original, Vitality, and Relax which is what I used for this recipe to pack some magnesium + it contains the amino acid L-Theanine which promotes relaxation & helps to lower blood pressure & anxiety.



Chewy Collagen Keto Haystack Fat Bombs

  • 40g Grassfed Butter 
  • 70g Cocoa Butter (I use Organic Traditions) 
  • 28g Coconut Butter Manna/Butter (I use Nutiva) 
  • 2 TBSP. Swerve 
  • 200g Organic Shredded Coconut (unsweetened) 
  • 2 TBSP Raw Cocoa (I use Organic Traditions) 
  • 1 Scoop Organika Relax Enhanced Collagen
  1. Melt butter, cocoa butter, and coconut manna in a heavy bottom pot on low until fully melted 
  2. Add Swerve, raw cocoa, and Organika Relax Enhanced Collagen 
  3. Increase heat to medium and cook until mixture boils and 'puffs up' 
  4. Remove from heat and add shredded coconut 
  5. For crunchy fat bombs mix coconut into liquid until fully absorbed and portion, for chewy fat bombs mix coconut into liquid until fully absorbed and add lid to the pot for one minute before portioning 
  6. Portion out onto parchment/wax paper with a TBSP measurement, you wil get 24 perfectly rounded mounds or haystacks 
  7. Enjoy!! 

Macros - these beauties are super easy on the macros. I do always recommend counting your own as things can vary with brands but this is what mine came in at per haystack.
24 servings - 105 calories, 2.3g fat, 0.3g net carbs (23 g carbs for the total recipe - 14g fibre), 0.67g protein each
